Peanut oil (if it is highly refined) and glucose syrup are derivatives of allergens that result from a process of degumming, neutralizing, bleaching, and deodorizing the original ingredient. As these have had the protein removed, they are granted exemptions under US allergen labeling regulations.

Roots, leaves, stems, bark or other parts distinct from a plant’s tree nut portion are not considered major food allergens. While coconut is designated a tree nut in the US, coconut sugar is derived from the sap of the coconut palm tree’s flower bud stem, so it is not labeled as a tree nut.

Oysters (and clams, mussels, etc) are molluscan shellfish, not crustaceans, so they do not need to be labeled as allergens.
